I love juicing but do feel a little guilty about the pulp that is left behind. I don’t compost, nor do I have a garden. Seemed like such a shame to keep tossing it.
Bright idea- vegan muffins.
That carrot, green apple, ginger pulp would be a great base for muffin batter!
- 3/4 whole wheat flour
- 1/4 cup silk
- 1/4 teaspoon baking powder
- 3 tablespoons raw organic honey
- 1 teaspoon vanilla
- lemon zest
Scooped the batter into a muffin tin and baked them in an 350° oven for 35 minutes.
They smelled delicious, but tasted meh.
Oddly enough a similar recipe exists for homemade dog treats.
This is yoga. And sometimes it goes to the dogs.
