Vegan Diaries – Juice Pulp


I love juicing but do feel a little guilty about the pulp that is left behind. I don’t compost, nor do I have a garden. Seemed like such a shame to keep tossing it.

Bright idea- vegan muffins.

That carrot, green apple, ginger pulp would be a great base for muffin batter!

I added

  • 3/4 whole wheat flour
  • 1/4 cup silk
  • 1/4 teaspoon baking powder
  • 3 tablespoons raw organic honey
  • 1 teaspoon vanilla
  • lemon zest

Scooped the batter into a muffin tin and baked them in an 350° oven for 35 minutes.

They smelled delicious, but tasted meh.

Oddly enough a similar recipe exists for homemade dog treats.

This is yoga. And sometimes it goes to the dogs.

    1. I was looking for a good vegan muffin recipe, but I’m sure the pulp would make for delicious muffins that used milk, eggs and sugar. Also a bit of nutmeg and some allspice might be tasty- if you find a great recipe, let me know!!! Namaste

  1. Absolutely a brilliant idea. Don’t know why I didn’t think of it before! I was so excited till the whole “meh” thing… too bad…perhaps one day I will try another recipe and let you know how it works.. any thoughts on how it might work better? Look forward to following! 😉
